Capocollo of Montesorbo (also called Lummelle)
Our pigs are fead withacorns that come from the nearby mountains: some grow up to 250 Kg in weight. The Capocollo made from the neck of the pig is made with great care and is seasoned for at least four months. Capocollo cointains very little fat and has a taste that is both sweet and savage in combina-tion with a hint of wood.A Cerasuolo and young white wines best accompany this kind of meat.

Prosciuttille
Made of the most precius part of the bacon, that is itself the Finest part of the pig. After being salted, the meat is lighty smoked in alamond tree bran-ches and then seasoned for 400 days before beings ready. Primo Levi defined people from Abruzzo as strong and gentle. You can find the same cha-racteristics in the extravergin olive oil of the Gentile of Chieti variety. Produced by biological agriculture, with a light fruiyt taste, it has good nutritional propreties as it is produced withthe “cold squeezing” tecnique. Both doctors and scientists agree that extravergine oil olive as is an aid in the prevention of colesterol.

Ratafià from vino cotto
As one Abruzzo’s traditional liquors, Ratafià is a cobination of “vino cotto” and alchool of back and wild cherryes. D’Annunzio defined it as an aphrodisiac. For the people of Abruzzo it’s is both a digestive and a refreshening drink.
