Production Rules
Rules to guarantee quality and healtiness of high quality Ventricina, which peculiarities are based on taste and nutrition features and strong reduction of chemicals in production and transformation stages.
These rules are parts of the technical specifications.
The Academy will designate a board composed by 3 experts that will control all production and transformation stages to be sure that everybody will respect these rules and the technical specifications.
First of all the technical board will locate special areas (biological oases) where to realize little breedings. They will select pigs belong to native or sickness proof races. The technical board will give all the instructions about feeding that breeders will have to respect until the date of killing.
At least a component of the technical board will have to be a veterinarian or an agronomer expert about breeding. Every three months he will contol all little breedings, alone or with other components of board. He will always ready for interventions on demand. The board will have to verify that pigs are breeded following traditional and biological methods. It is forbidden to use the following drugs:
Antibiotics,
Growth hormons,
Animal flours,
Transgenic feeds.
Pigs need suitable spaces. At least 4 m2 and a straw-bed need for every animal.
For the killing and transformation look at technical specifications notes.
Fellows and members who want Ventricinas, red salami, sausages in olive-oil, have to book before the end of November.
A good planning means to save one's time and money. The Academy will send the price list for the next year before the end of October.
Fellows and members who didn't book, will be able to buy products in the points of sale, if available.
